Ingredients of French Beans & Potato (Bhaji)

  1. You need 2 tbsp of oil.
  2. You need 1 tsp of hing.
  3. Prepare 1 tbsp of cumin seeds.
  4. You need 1 of green chilli (minced) (if you like the dish less spicy, skip this).
  5. You need 1 of green chilli, cut into 4 long slices.
  6. You need 1 of medium onion (diced).
  7. Prepare 400 g of French beans (cut into 1 inch pieces).
  8. It’s 3 of medium potatoes (peeled and cut into jullians).
  9. You need 1 tbsp of red chilli powder (+/- 1/2 for spice adjustment).
  10. You need 1 tbsp of kitchen king masala (to replace this you can take a blend of coriander powder, cumin seeds and garam masala in the ratio 1:1:1).
  11. It’s 1 tbsp of garam masala.
  12. It’s 1 tsp of amchor powder (dry mango powder).
  13. It’s 1 tbsp of sugar (preferably powder).

  1. Gather all ingredients.
  2. Wash the French beans and potatoes.

  4. Heat up oil in a wok / kadhai.
  5. Add hing, followed by cumin seeds.
  6. Add all green chillies.
  7. Add onions and fry until they are transparent.
  8. Add the chopped French beans.
  9. Add little salt for the French beans to cook, cover and cook for 2-3 minutes (check if the beans are half cooked).
  10. Add potatoes (Julian cut) followed with all spices except amchoor powder.
  11. Add salt to taste.
  12. Mix well, cover and cook (keep stirring and adding water little by little so that the dish does not stick to the bottom of the wok. add in all approximately 1-2 cups of water).
  13. When the potatoes are tender, add amchoor powder and 1 tbsp sugar.
  14. Mix well, turn of the heat and cover for 2 minutes.
